Why Puck Prep Matters
Before water hits coffee at 9 bar of pressure, the ground coffee bed must be uniform and level. Any inconsistency creates channels where water flows preferentially, extracting some areas too much and others too little. Proper distribution and tamping are the foundation of consistent, balanced espresso.
Distribution
Distribution prepares the grounds before tamping. The goal: an even, level bed of coffee in the portafilter basket.
WDT (Weiss Distribution Technique)
The most effective method: use a fine needle tool to stir and break up clumps in the basket. This eliminates the dense clusters that grinders create, ensuring water encounters uniform resistance throughout the puck.
Distribution Tools
Spinning distribution tools (OCD, levelers) sit on the basket and rotate to flatten the surface. They work well but are no substitute for WDT — they redistribute the top layer but do not address clumping deeper in the bed.
Tamping
Tamping compresses the distributed grounds into a flat, even puck.
Key Principles
- Level surface — the most important factor; use a calibrated or self-leveling tamper
- Consistent pressure — approximately 15-20kg is sufficient; more is not better
- No twisting — simply press straight down
- Flat base — ensure the tamper matches your basket diameter (usually 58mm)
Self-Leveling Tampers
Modern calibrated tampers (like the Normcore or Decent) have a spring mechanism that clicks at a set pressure and ensures a perfectly level tamp every time. They remove the biggest variable from the tamping process and are highly recommended.
The Complete Routine
- Grind directly into the portafilter
- WDT — break up clumps with a needle tool
- Level — tap side of portafilter or use a distribution tool
- Tamp — press firmly and evenly
- Clean the rim — wipe away stray grounds
- Lock in and brew
